Monte Hudson – owner / operator
Monte has more than 20 years cooking experience, gained both in Australia (Melbourne and Sydney) and abroad.
Monte started his career in 1993 and trained under Philippe Mouchel at Paul Bocuse Melbourne and Tetsuya Wakuda at Tetsuya’s in Rozelle. His resume includes two and a half years at the three Michelin star restaurant, Il Ristorante Don Alfonso (Italy) and more than 10 years at Sydney’s iconic Buon Ricordo.
Monte likes to work with fresh quality ingredients using traditional techniques. He brings his vast experience, and meticulous attention to detail, to the menu at Two Tall Chefs.
